1) I've just moved to an area that is constantly hit by both earthquakes and hurricanes! Consequently, I'm having a hard time getting my new house -------!
2) I ------- you, Sir, that I won't let anything bad happen to your daughter tonight.
3) Prisons employ guards in order to ------- that no prisoners will escape.

Hello,
1) I've just moved to an area that is constantly hit by both earthquakes and hurricanes! Consequently, I'm having a hard time getting my house insured!
2) I can assure you, Sir, that I won't let anything bad happen to your daughter tonight.
3) Prisons employ guards in order to ensure that no prisoners will escape.
I have added can in the second sentence because I have already heard it that way. But is it necessary?

No, it's not necessary. (In fact "I can assure you" is closer in meaning to "I am completely sure".)

Ave Travis,
1 ... insured.
2 ... assure ...
3 ... ensure ...
Please, I wish you wouldn't regard me as a presumptuous guy, which I'm not in the least. Just trying to be helpful.
Cordialement vôtre,
Jier

1) I've just moved to an area that is constantly hit by both earthquakes and hurricanes! Consequently, I'm having a hard time getting my new house insured!
2) I assure you, Sir, that I won't let anything bad happen to your daughter tonight.
3) Prisons employ guards in order to ensure that no prisoners will escape.
Merci travis.

Oops, I almost forgot! Although most of you got all three sentences correct, I did promise you a correction, so here it is:
1) insured
(to insure a thing = 1. to promise, in a contract, to reimburse the owner of the thing against a loss in its value 2. to obtain such a promise)
get + past participle = faire faire
2) assure
(to assure a person = to make the person feel confident, to make a promise to the person)
3) ensure
(to ensure an event = to eliminate any possibility that the event won't happen)
"I can't ensure that a flood won't happen, but, if you insure your house against flood, I can assure you that you won't lose money even if a flood should happen."
Good job!
