Our Story:
- Jean, a French man, works in London as a pastry chef: he is a famous craftsman! He came to England five years ago to set up shop, after graduating in France. It had always been his life's dream. To settle in England in order to open his pastry shop and make the specialties of each French region known to the British people hadn't been the work of a single man, but customers were coming from all England... Jean captured the British Market, and he also began to get customers from Eire, Wales and Scotland. However, he was worrying about the flour which came from France: it cost the earth and he was thinking of raising his prices all the more so as the butter prices were record high and he hadn't raised his prices since October, 31st 2014... As he was using organic eggs, and organic milk, and his cocoa came from Ecuador: Criollo had reached the highest prices ever seen... How could he maintain this quality level and satisfy his need to invest in his activity with such low prices? That seemed impossible... He had to make a living from his passion: he would bequeath his company to his son, when he was older. His son Philip had already shown interest in picking up the torch: when Philip was only 8 years old,... Philip, back from Poland where he had spent Easter had tasted a delicious cake, spit-baked for eight hours. As its ingredients are basic: flour, eggs, sugar, butter, cream, vanilla sugar, it could be a wedding cake: the benefits could be important, it would be different from the traditional wedding cake or "petits fours"! Jean recruited a Polish pastry cook. Igor also suggested creating different variations of this cake to satisfy each customer's tastes and to enlarge the offer. He suggested making a "Szarlotka", a traditional Polish cake, savored hot or cold and served with vanilla ice cream. He would offer a variety of this cake recipe, to do his bit towards the "Sekacz" which the Poles love... Chocolate, lemon, nuts, candies... everything can always be adapted to the customers' tastes. Philip took one back, for his father's birthday, and Jean fell in love with that cake because of its taste and its look. Moreover, this week, they're making a Toulouse speciality: the "Fenetra" with its almonds, apricots and candied lemons... a marvel! Besides, next Wednesday, Jean is having Mickael over at home for dinner to taste Jean's version of the "Fenetra". Jean made some Kouign-Amann: his childhood cakes, but also some chocolate buns ("pains au chocolat"/ chocolatines), croissants, brioches, macaroons for tea-time... He sold them all. His mother made the batter, his father had been a baker and helped his son. That Wednesday, the whole family was gathered to welcome Mickael, one of Jean's friends and a famous food critic.

He bought the terraced restaurant, in order to expand...: it overlooks Main Square,... with a private car park. An architect would transform it. But above all, Jean wanted to keep the big cold room and the pizza-oven. Eva, his eldest daughter and the youngest Luce would manage the terraced shop, helped by Philip. Britney would serve at the bakery with her husband François. Britney, the younger daughter, and François had done a Hotel Management School, as chocolate makers. With this in mind, Jean and Linda his wife, decided to raise the prices by a few cents, and to lighten the pastries'weights by some fifty grams; on the other hand, they would offer a different promotional product a day. Jean requested a loan from his bank, and got. The architect had begun the renovation work. The twenty-four covers were served on the first floor, customers were queueing up in spite of the new prices. The project was a big success: mainly thanks to word of mouth, the turnover immediately increased by thirty percent. To celebrate their success, they decided to send invitations to their best customers, to take part in a cocktail party in which a reward would be granted to the best customer, hoping to boost sales even more next time.

Jean, français, travaille à Londres, en tant que pâtissier : c'est un artisan réputé ! Il est venu en Angleterre il y a cinq ans pour ouvrir un commerce, après qu'il eut obtenu son diplôme en France. Cela avait toujours été le rêve de sa vie.
S’installer en Angleterre afin d’ouvrir sa pâtisserie et faire connaître les spécialités de chaque région Française aux Britanniques n'avait pas été un parcours inédit, mais les clients venaient de toute l'Angleterre ... Jean conquit le marché anglais et il commença à avoir des clients aussi depuis la république d’Irlande, le Pays de Galles, et l’Ecosse. Cependant, il se faisait du souci à propos de la farine qui venait de France : elle coûtait les yeux de la tête et il envisageait d'augmenter ses prix d'autant plus que les prix du beurre atteignaient des niveaux record et qu'il n'avait pas augmenté ses prix depuis le 31 octobre 2014... Comme il utilisait des œufs bio et du lait bio, et son cacao arrivait d'Equateur, le prix du Criollo n'avait jamais été aussi élevé... Comment pourrait-il maintenir ce niveau de qualité et satisfaire son besoin d'investir dans son activité avec des prix si bas ? Cela semblait impossible... Il devait vivre de sa passion : il lèguera l'affaire à son fils, quand celui-ci sera plus grand. Et son fils Philip avait déjà manifesté de l'intérêt à reprendre le flambeau : quand Philip avait seulement 8 ans,... Philip, rentré de Pologne, où il était pour Pâques avait goûté un gâteau délicieux, cuit à la broche durant huit heures.
Avec des ingrédients basiques : farine, oeufs, sucre, beurre, crème, sucre vanillé ... ce pourrait faire un gâteau de mariage : le bénéfice pourrait être important, ça changerait de la traditionnelle pièce montée ou les petits fours! Jean recruta un pâtissier polonais
il proposa de faire un "Szarlotka", le gâteau traditionnel polonais servi chaud ou froid accompagné d'une glace à la vanille. Igor proposa aussi de créer différentes versions de ce gâteau pour satisfaire les goûts de chaque client et pour renouveler l'offre. Il offrirait une déclinaison de cette recette de gâteau, pour apporter une nouveauté, le "Sekacz" dont les polonais raffolent... chocolat, citron, fruits secs, bonbons ... tout est toujours possible pour s'adapter aux goûts des clients. Philip en a ramené un, pour l'anniversaire de son père, et Jean tomba amoureux de ce gâteau, en raison de son goût et de son aspect.
De plus, cette semaine, ils réaliseront une spécialité toulousaine : le "Fenetra" avec ses amandes, ses abricots, ses citrons confits....une merveille !

Il les vendait tous. Sa mère fabriquait les pâtes, son père avait été boulanger, et aidait son fils.
Ce mercredi-là, toute la famille était réunie pour accueillir Mickael, un des amis de Jean et un célèbre critique culinaire. Mickael dit : "ce que vous avez de mieux à faire serait d’aménager un salon de thé au premier étage avec toutes les nouvelles patisseries" et il ajouta : "Tu devrais mettre en avant ta Fenetra : c'est le meilleur que j'aie jamais goûté."
Jean ne regrettait pas sa formation après son licenciement en tant que photographe, car il exerçait son talent d'artiste: les clients adoraient ses produits, il pouvait même aussi concevoir un nouveau produit, il acheta tout ce qui était nécessaire pour confectionner les produits les plus raffinés et exquis, avec une innovation et une créativité à nulles autres pareilles. Il acheta le restaurant mitoyen, afin de pouvoir s'agrandir... : il donne sur la grande place, ... avec un parking privé.
Un architecte le transformera. Mais par-dessus tout, Jean voulait garder la grande chambre froide et le four à pizza. L'aînée de ses filles Eva et sa cadette Luce géreraient la boutique d'à côté, aidées par Philip. Britney servirait à la pâtisserie avec son mari François. Britney, la benjamine a fait l'école hôtelière avec François, comme chocolatiers.
Dans cette perspective, Jean et Linda sa femme, décidèrent d'augmenter leurs prix, de quelques cents, et de réduire le poids des pâtisseries de cinquante grammes; en revanche, ils offriraient un produit promotionnel différent par jour.
Jean demanda un prêt à sa banque et fut accepté. L'architecte avait commencé les travaux de rénovation. Les vingt-quatre couverts du premier étage étaient complets, les clients faisaient la queue, malgré les nouveaux tarifs !
