"What" wouldn't fit. What is your bike is wrong!
At a pinch:

What make is your bike ? A Bianchi !
What is your bike like ? It is very light and very easy to ride.
What colour is your bike ? Blue!

Your sentence doesn't make sense.
When you have to choose between two or among several things, you have to use 'which'.
