custody illegal ?

Hello,
might anybody give me informations about custody ?
In France, there exists something that is called :"presumption of innocence". You're not guilty until you're found guilty !
So, why can you be sent in jail even though you're not found guilty, that is, legally innocent ?
Aren't "custody" and "presumption of innocence" contradictory ?
What do you think about that ?
